Grundlagt i 1998 af Otago-pioneren Grant Taylor, som har lavet vin i regionen siden 1993, da der kun var 20 ha vinmarker (i dag over 2.000). Huset er opkaldt efter hans tipoldefar Giuseppe Valli, der udvandrede fra Italien med en vinbaggrund. Målet var fra begyndelsen at vise Otagos underområder rent og intenst – noget ingen før havde forsøgt. Siden 2015 har vinmager Jen Parr arbejdet sammen med Grant. Udgangspunktet er den tætplantede hjemmevingård i Gibbston; derudover laves Pinot Noir fra Bannockburn og Bendigo i Central Otago og fra Waitaki Valley i North Otago samt Pinot Gris og Riesling fra Waitaki og en skindgæret Pinot Gris (orange vin) fra Gibbston.
