Cabernet Sauvignon 2021

Kanonkop, fact sheet (kanonkop.co.za – linket fra kanonkop.co.za, hentet 2026-10-18): 2021 Kanonkop Cabernet Sauvignon – område: Simonsberg-Stellenbosch; 100% Cabernet Sauvignon; alkohol 13.5%; fadlagring 24 måneder, 50% nye fade. Producentens noter (engelsk): Soil: Decomposed Granite and Hutton clay soils. Age of vines: 30 years on average. Irrigation: Dry land vineyards. Trellising: 5 wire hedge. Yield: 4 tons per hectare. Vintage conditions: Warmer periods during the latter part of the winter resulted in some uneven budding, flowering and fruit set. The moisture levels in the soils were satisfactory throughout the growing and ripening phase, and very little moisture stress was noticeable on the vines. The late start to the 2021 harvest was one of the distinguishing hallmarks of this vintage. The cooler growing conditions of the 2021 vintage resulted in elegant wines. Winemaking/maturation: Fermentation took place in open top concrete fermenters at 29°C. The floating skins were punched down by hand, every 2 hours during fermentation. The juice was drawn off the skins after 5 days. After malolactic fermentation the wine was matured for 24 months in 50% new and 50% second fill 225L French Nevers oak barrels. Kompleks næse af cedertræ, cigarkasse, cassis, blyantspåner, laurbærblad og et strejf af paprika. Intens mund fuld af lag af solbær, sorte kirsebær, røde blommer, valnødder, bagekrydderier, cremet vanilje og cedertræ. Vinen har en bred midte i munden, smukt afbalanceret syre, silkebløde tanniner og en lang, tilfredsstillende finish.
