Producentens noter (engelsk): Winemaking: Produced from low-yielding bush vines on the Simonsberg mountain. Grapes were hand-picked and sorted in the cellar into stainless steel tanks for fermentation. Pump over every 2 hours for the first 3 days and then pressed early to finish fermentation without skins; this results in a finer tannin structure. The wine was then transferred to French oak barrels for a 14-month ageing period, with 13% new, before filtration and bottling.
