Producentens noter (engelsk): Vintage characteristics: Our 2025 growing season was characterised by a warm, dry autumn, record rainfall in July, and a delayed onset of winter. In response to these conditions, our Chardonnay vineyards were pruned later than usual to encourage even budburst and balanced vine growth. This careful vineyard management delivered greater consistency, allowing the grapes to ripen evenly and develop exceptional concentration and character. Cool, dry weather during the harvest period ensured pristine fruit quality, laying the foundation for an outstanding vintage. Vineyards & harvest: Grapes were harvested by hand from Delaire Graff Estate’s mountain vineyards during various ripening periods, with the selection based on flavour to ensure optimal sugar concentration and a perfect balance of acidity. Vinification: Overseen by Winemaker Morné Vrey, extensive bunch sorting formed an integral part of the quality management process. Grapes were then whole bunch pressed and barrel fermented for 14 days. Maturation took place in 225-litre, 40% new French oak barrels for 10 months, with no batonage or malolactic fermentation to retain freshness.
