Both grape growing and wine making have elements of beauty and chaos embedded within. A natural progression was to embrace a little more chaos and beauty within these two related cultures. Therefore the name Beautiful Chaos seemed appropriate for these wines. They are different from any other wines we make. Despite this, they are very much a part of our evolving culture.’ Organic and Biodynamic Suitable for Vegetarians and Vegans - Michael Seresin Tasting Notes Incredibly mouthwatering and delicious, our Beautiful Chaos white is the perfect marriage of ripe citrus fruits and ginger spice. Time fermenting on skins has brought to the fore a wonderful phenolic structure that finishes dry. Winemaking Two parcels of Pinot Gris and one of Riesling were each harvested by hand, destemmed then fermented naturally and aged on skins in a small clay amphorae and a small stainless tank. The parcels were gently hand plunged daily during fermentation and left on skins for 21-26 days. After ferment, the components were basket pressed to neu­tral oak. The wine remained in barrels on lees for three months undergoing malolactic fermentation naturally. The barrels were then racked gently into a small stainless steel vessel to clarify naturally for two weeks prior to bottling. It was bottled without any stabilisation, fining or filtration and with a minimal sulphur addition. Vintage Despite the challenging season that Mother Nature provided early on, the vineyard at Raupo shone, looking remarkably vibrant, alive and healthy. We were blessed also with even flowering so the bunches in general were smaller and uniformly spread across the canopy, and naturally low. Smaller berries and bunches certainly gave a level of concentration that was welcomed. The season was not easy, and certainly wet in the months leading up to harvest, so to see the cleanliness of the fruit was very encouraging.
