Both grape growing and wine making have elements of beauty and chaos embedded within. A natural progression was to embrace a little more chaos and beauty within these two related cultures. Therefore the name Beautiful Chaos seemed appropriate for these wines. They are different from any other wines we make. Despite this, they are very much a part of our evolving culture.’ Organic and Biodynamic Suitable for Vegetarians and Vegans - Michael Seresin Tasting Notes The Beautiful Chaos Pinot Noir embodies a minimalist, mindful way of winemaking. Luscious biodynamic Pinot Noir grapes have been fermented and aged in amphorae. The result is an incredibly transparent, yet vibrant and rich expression of Pinot Noir, that is supported by layers of ripe red fruits. The wine has been bottled unfined and unfiltered. Winemaking Certified organic grapes were hand-picked and destemmed to a combination of amphorae and a small stainless steel fermenter. Both batches undertook wild fermentation and had daily gentle cap management. The fruit remained on skins for one month before being pressed off. The wine was then returned to amphora and neutral oak barriques for ageing and to undergo malolactic fermentation naturally. After 3 months ageing, the wine was racked to a small stainless steel tank to clarify naturally prior to bottling. Bottled without any stabilisation, fining or filtration. Vintage Despite the challenging season that Mother Nature provided early on, the vineyard at Raupo shone, looking remarkably vibrant, alive and healthy. We were blessed with even flowering so the bunches in general were smaller and evenly spread across the canopy, and naturally low. Smaller berries and bunches certainly gave a level of concentration that was welcomed. The season was not easy, and certainly wet in the months leading up to harvest, so to see the cleanliness of the fruit was very encouraging.
