Trinity Hill, produktside (hentet 19. okt. 2026): 2021 Trinity Hill Prison Block Cabernet Sauvignon – område: Hawke's Bay; druer: Cabernet Sauvignon. Enkeltmark ifølge producenten: Prison Block. Producentens tekst (engelsk): The Prison Block gets its name from a three-quarter-hectare section in our “Gimblett Stones” vineyard behind Roys Hill originally earmarked for the Hawke’s Bay Regional Correctional Facility. The Clone 337 Cabernet Sauvignon vines planted there produce tiny berries with intense colour, concentrated/complex flavours, ripe tannins, and balanced acidity. All the hallmarks necessary to produce a wine worthy of a single vineyard release. The Wine : Hand-harvested fruit was destemmed to obtain 100% whole berries and transferred to a large closed-top fermenter. The fermentation was pumped over once per day to extract colour and tannin. After extended time on skins the wine was pressed and racked to 225-litre French oak barriques (85% new). After 19 months maturation, the wine was racked out of barrel and bottled in February 2022 with no fining and minimal filtration.
