Length of alcoholic fermentation: Approximately 1 week Fermentation temperature: 25-30°C Ageing: Minimum of 16 months in oak, with 45% being new, of French origin (96%) and American (4%). Residual sugar: 0.5 g/L - Internal data - Allergy advice: Contains sulfites Stored under the right conditions, the wine will hold its potential for the next: 7-10 years AVAILABLE FORMATS 300 cl, 150 cl and 75 cl TASTING NOTES Cherry colour, well-covered. Delightful on the nose, expressive and rich in fruity aromas (cherry jam), with a background of dried fruit (prunes) and toasted notes (torrefacto coffee, cocoa). On the palate, it is flavourful and powerful, with tannins that can still be refined in the bottle over the coming years. SERVING SUGGESTIONS With smooth tannic and fruity characteristics, it is the ideal accompaniment to a wide variety of meat and game dishes, whether grilled or roasted, as well as roasted vegetables. Weather conditions The year 2021 was a normal year in terms of rainfall, but with a dry summer. It is worth noting that at the beginning of the year, the storm Filomena brought abundant snowfall and a period of intense frosts. Regarding temperatures, February was warmer than usual, as was August, but the rest of the year was within the normal range.
